This Laksa recipe is just like the laksa you get from real Malaysian laksa joints. You can't just dump Laksa - the iconic Malaysian spicy coconut noodle soup! Jamie Oliver's chicken laksa recipe is a punchy, flavour-packed, coconutty corker of a dish. Things might get pretty simple sometimes but sometimes that's just what a person needs.

The ingredients needed to make Chicken Laksa:
  1. Get 500 grams Chicken thigh fillet, 1 inch diced
  2. Get 1 Brown onion, diced
  3. Make ready 1 Zucchini, halved lengthways and sliced diagonally
  4. Take 2 medium carrot, sliced as zucchini
  5. Get 1 1/2 cup Broccoli florets
  6. Prepare 1 bunch Baby bok choy, roughly sliced
  7. Take 1 Handful snow peas, sliced diagonally
  8. Get 1/2 Red capsicum, sliced
  9. Get 1 Handful baby corn
  10. Make ready 1/2 cup Bamboo shoots
  11. Take 1 small can chopped water chestnuts
  12. Prepare 1 cup Bean sprouts
  13. Get 2 can (400ml) coconut cream
  14. Get 125 grams Rice noodle
  15. Make ready 1 Chopped chilli, to taste
  16. Make ready 1 Cayenne pepper, to taste
  17. Get 1 Cracked black pepper, to taste
  18. Make ready 1 jar laksa paste (or red curry, or panang)
  19. Make ready 1 tbsp Chicken stock powder
  20. Make ready 1 stick Spring onion, sliced diagonally

Comforting Laksa Soup Recipe - A Malaysian-style coconut curry noodle soup, that can be made with chicken or shrimp and rice noodles with fresh bean spouts, lime and cilantro. Put the chicken in a large saucepan with the coriander seeds, ginger, lemongrass, lime zest and a little salt. Like any good curry, this soup develops in flavour if left overnight. Laksa is usually served with some variation of seafood added to it.

Steps to make Chicken Laksa:
  1. In large non stick pot- brown chicken and set aside. Add onion, curry paste and fry until onion is soft. Add coconut cream and hard veggies, stock and spices. Bring to boil and simmer until slightly softened.
  2. Meanwhile- boil kettle, pour over rice noodle and cover until cooked. Strain and set aside.
  3. Add soft veggies (bok choy, bean sprouts) for another minute or two. Throw some rice noodle in bowl- then laksa- top with spring onion and toasted chopped peanuts. Wallah!

Like any good curry, this soup develops in flavour if left overnight. Laksa is usually served with some variation of seafood added to it. Prawn and mussels are my favorite and I I love spicy noodle soup and was excited to try Kirthana Dorairaj's recipe for Chicken Laksa. This milky chicken and noodle laksa is full of Malaysian flavour!
