Make ready 4 cups Chilled water
Get Brown Pani :
Get 1 cup imli pulp
Make ready 1 tbsp black salt
Get 1 tbsp chaat masala
Prepare 1 tsp red chilli powder
Take 1/2 tsp salt
Prepare Quarter tsp Ginger powder
Take 5 cups chilled water
Instructions to make Pani Puri with 2 types of Water π:
To make puries prepare its dough by mixing all the dry ingredients of puri together.
Now gradually pour hot water in it to combine and keep mixing with the spoon as water is hot so we can't touch it at this spot. - - When it is well combined knead it for 2 mins with hands and cover it. give it rest for 15 to 20 mins
Now make 4 equal balls of it. - - Now roll them 1 by 1.. and cut your desired size puris out of it. Then give them 10 to 12 mins rest. Don't cover them.
Now fry them.. keep dry side of puri upside and soft side downwards and keep pour hot oil on each puri till they becomes like a ball.. after that flip there sides and fry till nice golden from both sides. - - Now keep them in strainer for 5 mins. - - From this quantity You can make approximately 48 puris.
Now make Green Pani and for that Blend all ingredients together than mix dry spices to it except chilled water.
Now add water to this prepared chutney and mix it well.
Now brown water… Mix all the ingredients into imli pulp well then mix 5 cups of chilled water in it.
Now assembling of puri : Make hole in puri, put few chaat masala coated boiled chickpeas in it, thn meethi chutney, thn meetha dahi, thn sev and cilantro.
Serve with prepared waters π
