  1. Take 3-4 Ridge gaurd
  2. Take 1 onion
  3. Take 3-4 curry leaves
  4. Take 1/2 table spoon ginger garlic paste
  5. Get 3-4 Green chilli
  6. Get 1 table spoon chilli powder
  7. Make ready 1/2 table spoon coriander powder
  8. Get 1/2 table spoon cumin powder
  9. Take to taste Salt
  10. Take Pinch turmeric
  11. Make ready 1/2 table spoon mustard and cumin seeds
  12. Get 1/2 glass milk
  13. Prepare 1/2 table spoon roasted seseme seeds powder

Once in a while i make ridge gourd curry at home as a side dish for chapati/ roti. They taste great with plain rice too, topped with I learned this recipe from her and ever since its been a part of routine to make this curry either as a gravy for rice or side for chapatis. Heat oil in the pan and add urad dal, mustard seeds, cumin seeds, curry leaves and let them splatter on medium heat.

Steps to make Ridge gaurd curry (beerakaya kura):
  1. Slice Ridge gaurd and onion
  2. Grind Green chilli
  3. Take a pan and keep it on the stove, once the pan heats pour oil, once the oil heats add mustard and cumin seeds, once it starts spluttering add onions, curry leaves, roast it, add green chilli paste salt, turmeric, again roast it. Add Ridge gaurd. Mix it. Close it with a lid. Keep the stove in low flame.
  4. Open the lid after some time and check whether it is cooked properly or not, if it is cooked add coriander powder, cumin powder, roast it in a low flame. Add milk, once the milk evoporates add seseme seeds powder. Then add coriander leaves. Mix it.
  5. Take it into a bowl and serve hot with rice /chapathi /roti.
