Ingredients of Prawn and Pineapple Rice. While the rice is cooking, combine the pineapple and juice, chives, parsley, and crushed red pepper flakes in a bowl and set aside. Combine cooked rice, drained pineapple, a few tbsp. of reserved pineapple juice, coconut, chopped basil and a pinch of salt in bowl and toss to combine. Serve shrimp over rice and drizzle with remaining pan juices.

  1. Put the cooking oil, butter and the prawns into a large wok or saucepan. Bring up the heat gently to thaw out and start to cook the prawns.
  2. Once the Prawns turn from blue to pink, add the rinsed Basmati Rice, and the contents, including the juice, from the tin of Pineapple. Stir well and heat until bubbling.
  3. Giving an occasional stir, keep cooking until all the liquid has been absorbed by the rice and everything is nice and “ sticky”. Can be eaten hot or cold!!

Combine cooked rice, drained pineapple, a few tbsp. of reserved pineapple juice, coconut, chopped basil and a pinch of salt in bowl and toss to combine.
