To begin with this particular recipe, we have to first prepare a few ingredients. You can have veg thukpa using 10 ingredients and 7 steps. Here is how you cook it.

The ingredients needed to make Veg Thukpa:
  1. Get 500 gms chopped vegetables like carrots, beans, cabbage,sweet corn,etc
  2. Prepare 150 gms noodles of your choice
  3. Make ready 2 tablespoon mustard or vegetable oil
  4. Prepare as needed Water
  5. Get to taste Salt
  6. Prepare 1 tablespoon freshly grated ginger
  7. Get 1 tablespoon soy sauce
  8. Take 1 tablespoon freshly crushed black pepper powder
  9. Get 1 tablespoon white radish shredded
  10. Take 1 tablespoon Chilli sauce
Instructions to make Veg Thukpa:
  1. Heat oil in a saucepan and sauté the grated ginger for 1/2 a minute on medium heat
  2. Add the chopped vegetables and sauté for 3-5 minutes
  3. Add salt to taste, black pepper powder, soy sauce and mix well
  4. Add at least 2 cups of water and bring it to boil
  5. Reduce heat and cook covered until vegetables are half done
  6. Add the noodles and mix well and let the soup simmer covered until the noodles and veggies soften.
  7. Transfer to serving bowls and garnish with grated radish and chilli sauce
