  1. Preheat oven to 180c, then line a 9x13 rectangle cake tin with parchment paper
  2. In a stand mixer mix 3 eggs till foamy about 1minute then slowly add the vegetable oil, then mix again
  3. In a separate bowl put flour salt baking powder and baking soda with cinnamon, mix together,
  4. Then add the flour mixture to the egg mixture and mix till incorporated
  5. Then finally add the carrots ripe banana and vanilla to the mixture, mix gently,then pour mixture into the tin and cook for about 40 to 45 minutes until firm to touch, take out and cool in tin for 10 minutes before turning out
  6. To make cheese frosting, mix cream cheese with butter till creamy then add icing sugar vanilla and zest of one orange, spread over cool cake, cut into 12 large pieces and serve!!
