Take 1 cup matki Sprouted
Take 2 finely chopped onions
Make ready 2 tbsp ginger garlic green chilli paste
Prepare 2 finely chopped tomatoes
Take Handful curry leaves
Prepare 1/2 cup chopped coriander leaves
Make ready 1 tsp cumin seeds
Prepare 1/2 tsp mustard seeds
Take 1 tsp turmeric powder
Make ready 1 tsp red chilli powder
Take 1/2 tsp garam masala powder
Make ready 3 tbsp roasted peanut powder
Take to taste Salt
Get as needed oil
Prepare as needed water for gravy
Instructions to make Matki Sprouts Sabzi:
Firstly soak 1 cup matki overnight and then next day morning drain all the water and keep the matki in sprouts maker for another 8 hours to get sprout germination.
Now heat oil in a pressure cooker and add Mustard seeds, let it crackle then add cumin seeds, then add Curry leaves and saute for half a minute.
Now add ginger garlic green chilli paste and saute till raw Aroma of garlic disappears. Now add chopped onions and fry till they are golden brown in colour. Now add chopped tomatoes and mix well.
Now add turmeric powder, red chili powder and Garam Masala powder. Saute till oil separates from the sides.
Now add matki sprouts and give it a good mix. Add salt and one glass water. Cover the pressure cooker and take only one whistle.
Let the pressure release then add chopped coriander leaves from above and roasted peanut powder.
Matki Sprouts Sabzi is ready to serve. It goes very well with hot triangle parathas and curd.
