  2. Make ready 250 gms white vatana
  3. Prepare 150 gms sev
  4. Make ready 1 packet sev puri, puri
  5. Take 1 cup coriander leaves
  6. Get 2 tsp chaat masala
  7. Take 1 tsp turmeric powder
  8. Get 1 tsp garam masala
  9. Take 1 tsp roasted jeera powder

  12. Prepare 4 green chillies
  13. Make ready 1/2 tsp salt
  14. Make ready 1 inch ginger

  16. Make ready 1/2 cup dates
  17. Prepare 1 tsp jaggery
  18. Prepare 2 tbsp kokum
  19. Prepare 1 tsp salt
  20. Get 1/2 tsp red chilli powder
  21. Prepare For garlic chutney:
  22. Take 20 garlic flakes
  23. Get 6-7 Kashmiri red chillies
  24. Make ready 1/2 tsp salt

Ragda - a curry or gravy preparation of dried white peas is called as ragda. Ragda Patties is popular street food from the state of Maharashtra and Gujarat in India. Potato patties are served with a spicy white pea curry and garnished with chutneys, cilantro and sev! Ragda patties is an immensely popular street food from the Western Indian states of Maharashtra and Gujarat.

Steps to make Ragda pattice:
  1. Soak the white vatana for 6-8 hrs. Boil the potatoes. After 6-8 hrs, pressure cooker the vatana for 6 whistles. Chop onions, coriander leaves.
  2. Make the ragda- Heat oil, add hing, salt, red chilli powder, roasted jeera powder and haldi. Keep it aside.
  3. Now make the chutneys- for green chutney - In a mixie add coriander leaves, ginger, green chillies and salt. And make a fine paste. Adjust water according to the red consistency.
  4. To make sweet and sour chutney. Heat water, add dates, jaggery and kokum. After 1 hour and hour squeeze the kokam and make a paste of dates. Add red chilli powder and salt. Mix well until jaggery gets dissolved.
  5. To make garlic chutney - Soak kashmiri red chilli in hot water. Then take garlic flakes and the chilli and make a smooth paste. Strain the garlic chutney through a strainer.
  6. Now take the boiled potatoes, smash it, add the chaat masala, red chilli powder, haldi, roasted jeera powder, garam masala and salt. Mix and make the shape of pattice. On a pan roast it on both sides till brown.
  7. In a serving plate, place the pattice, then add the ragda, all the 3 chutneys, chopped onions, crushed puris, sev and lastly garnish with coriander leaves.
