Hey everyone, it’s John, welcome to my recipe page. Today, we’re going to prepare a special dish, grilled kofta kebab. It is one of my favorites food recipes. For mine, I will make it a little bit tasty. This will be really delicious.

I was first introduced to Middle Eastern food by my father who would take us to a small local Turkish restaurant in downtown Halifax.   1. Prepare 500 gms fresh minced mutton with fat

  10. Get 1/2 teaspoon Cardamom powder
  11. Make ready 1 teaspoon Sumac powder/Mango powder can be substituted
  12. Make ready 1/4 th teaspoon Nutmeg powder
  13. Make ready 1/2 teaspoon Black pepper crush
  14. Prepare to taste Salt
  15. Prepare Little oil to brush the grill
  16. Prepare For serving:
  17. Get As required Any kind of flat bread you like
  18. Take As required Cucumber wedges
  19. Prepare As required Tomato wedges
  20. Take As required Onion wedges
  21. Take Handful Chopped Coriander leaves
  22. Prepare As required Tahini or Hummus dip

What is Kofta Kebab Yes, you can make this ground lamb kebab recipe ahead. Mix it all together, and form meat onto the bamboo skewers and place the skewers on a platter. Then take them out and grill according to the directions. Kofta is a mix of ground meat, herbs and spices that's formed into a meatball or meatloaf.

Steps to make Grilled Kofta Kebab:
  1. Soak wooden skewers in water for about 30 minutes to 1 hour. Remove from water when you are ready to begin.
  2. Toast a piece of sliced bread and soak in water for until it becomes tender. I used 3 small pieces.
  3. In a food processor or mincer, add in roughly chopped onion, garlic, green chillies and coriander leaves or parsley. Mince them well.
  4. Add the minced mutton, bread (be sure to squeeze out the water completely), and the spices. Run the processor until all is well combined forming a sticky homogeneous mixture.
  5. Cover and keep aside for 1/2 an hour so that all the flavours well incorporated to the meat.
  6. Line a big dish with cling film and make ready the skewers. I also used some iron skewers along with wooden skewers.
  7. Remove the meat mixture from the food processor after resting time and place in a large bowl. Take a handful portion of the meat mixture and mould it on a skewer.
  8. Repeat the process. For best results, make sure each kofta kebab is about 1 inch in thickness.
  9. Place the kofta kebabs on the lightly oiled, heated grill pan. Grill on medium-high heat for 4-5 minutes on one side, turn over and grill for another 3-4 minutes. You can also grill them in the preheated oven. I don’t have grill option in my oven so used a grill pan.
  10. Serve the kofta kebabs immediately with your favourite bread, tahini/hummus and some cucumber, tomatoes, onions and coriander or parsley.

Then take them out and grill according to the directions. Kofta is a mix of ground meat, herbs and spices that's formed into a meatball or meatloaf. Kofta kebabs are formed around a skewer. These Turkish kofta kebabs can be made with either ground lamb or beef. I've done it both ways with great success.
