Handvo, a delicious savory cake made from rice, lentils and vegetables like bootle gourd, carrot, green peas, etc., is a traditional Gujarati snack enjoyed with Green Chutney. Handvo is a traditional gujarati savory cake made with rice, lentils and lots of vegetable like bottle gourd, fenugreek leaves and carrots. Spiced with fresh ginger and green chilies, tempered with mustard seeds, sesame seeds and dried red chillies. This wholesome dish can be enjoyed as a meal by itself or with a side of pickle or chutney.

The ingredients needed to make Handvo (Savoury Cake):
  1. Take 500 g readymix handvo aata (mix lentil atta)
  2. Prepare 1 medium bowl boiled/ frozen green peas
  3. Make ready 1 tsp green chilli paste
  4. Make ready 1 tsp ginger paste
  5. Prepare 1 big bowl curd
  6. Get For Seasoning
  7. Get 1/2 tsp Mustard seeds
  8. Take 5/6 Curry leaves
  9. Get 1/2 tsp White Sesame seeds
  10. Prepare As needed Oil for cooking
  11. Take As needed Salt

This savory cake is made with rice and mix of lentils. Often vegetables like bottle gourd, carrot etc. This delicious rice and lentils cake is spiced with fresh ginger, green chilies. Handvo is a Gujarati dish which is a savoury rice and lentil cake.

Instructions to make Handvo (Savoury Cake):
  1. Take Handvo atta, add curd, ginger- garlic paste and salt as per taste. Mix all the ingredients well till you get a batter of thick consistency. Do not add water.
  2. Cover the mixture with a lid and let it sit still for 5 hours.
  3. After 5 hours, you can see that the flour has risen due to fermentation. Add 1 medium bowl boiled/ frozen green peas to it and mix it properly.
  4. Heat oil in a Kadai (deep frying vessel). After the oil becomes hot, add mustard seeds and wait till the spluttering is over. Then add white sesame seeds and curry leaves. After that add 2 tbsp of batter into it. Lower the flame to medium. Cover the kadai with a lid for 5-7 minutes till it becomes golden brown on one side.
  5. After 5-7 minutes, carefully flip the handvo to the other side. Again cover it with lid and cook for 5-7 minutes. Alternate between medium to low heat. Occasionally check that the handvo doesn't get burnt on any side.
  6. When it is done, remove on a plate, cut the handvo into 4 pieces with a knife and serve hot with green chutney and ketchup.
