Instructions to make Mumbai Style Pav Bhaji:
  1. Chop and pressure cook all veggies except onion,tomatoes and capsicum for 3 whistles.
  2. Cool and mash
  3. Heat oil in a kadhai. fry chopped onions. Add the capsicum and saute. Now add the tomatoes and dry masalas. Add salt mix cover and cook.
  4. Add the mashed veggies. Add butter and mash and cook while cooking. Add water to adjust consistency.
  5. Cook for 5 to 7 minutes. Butter the pavs and sprinkle some chilli powder and toast on hot tawa.
  6. Serve pav and bhaji garnished with onions,lemon wedges and coriander. Slide a tbsp of butter on hot bhaji enjoy.
