Prepare For stuffing
Take 100 GM or 1/2 cup Masoor Dal/Red lentil

Make ready 1 cup/ 240 ml water + 1/2 cup hot water
Take 1 fistful of green coriander leaves chopped

Take 300 gms Maida or 250 maida & 50 gm Atta
Make ready as required Water
Make ready 2tsps Oil
Take 1/4 tsp Salt
Make ready For Deep frying
Take as needed Vegetable oil
Take As needed Garlic tomato Chutney (reference provided)
Steps to make Masoor Dal ki Puri:
Wash the Dal and add ginger, Turmeric and little salt (we are going to check and add later on as per taste)
Add one cup room temperature water to the Dal, keep some hot water ready you may require about half a cup while cooking the Dal.
It takes about 20 minutes for the Dal to cook and dry up. As and when required add little hot water and keep stirring and cooking, smashing with the spatula as you cook. Check salt and add if required. Add a handful of coriander leaves also. When cooked and dried, it will look like a dough (as in the pic)
Put it on a steel plate spread do that it comes to room temperature as quick as possible….it will take half an hour.
Whole the Dal stuffing is cooling, knead the dough and prepare the chutney. Let the dough rest for 20 -30 minutes. - (see recipe)
Heat oil in a kadai for frying the puris. Divide the dough into 15 pieces. Take one by one smoothen it and with the help of your finger form a bowl/ katori shape….keep the stuffing and bring the edges together and close and form a ball.
With the help of little oil and rolling pin flatten it and fry it as you would fry other puris. Fry and serve hot with chutney, curry etc of your choice.
