The ingredients needed to make Khoya Madhuri:
  1. Prepare For the pastry:-
  2. Take 150 gram all-purpose flour
  3. Get 1 teaspoon baking soda
  4. Make ready 1/4 teaspoon salt
  5. Make ready 2 tablespoon ghee
  6. Get 1 cup water
  7. Take For the filling :-
  8. Make ready 1 cup khoya
  9. Make ready 1/4 cup desiccated coconut
  10. Take 1 small pinch nutmeg powder
  11. Prepare 1/2 teaspoon green cardamom powder
  12. Make ready 1/2 cup sugar
  13. Take For the sugar syrup :-
  14. Take 1/2 cup granulated sugar
  15. Get 1/4 cup water
  16. Get 2 green cardamoms, lightly crushed
  17. Take For decoration :-
  18. Get Silverfoil
  19. Take Chopped pistachio
Steps to make Khoya Madhuri:
  1. Making of the Cups:-Prepare a small cavity cupcake tray by greasing with ghee.
  2. In a bowl, mix flour,baking soda and salt.Add ghee into this,mix well. Now add water in a small portion and knead the dough until smooth.Cover the bowl and let the dough rest for 30 minutes.
  3. Divide the dough into 4-5 equal sized balls.
  4. Now roll each ball on a lightly floured surface to 1/2 cm thick and cut round shapes using a circle shaped cutter.
  5. Now shape these circles inside the cupcake cavities by using your fingers.
  6. Trim off the excess edges with a knife from the top. Prick the insides of the dough cups with a toothpick, do the pricking gently.
  7. When all the cups are ready,keep the tray refrigerated for 30 minutes before baking.
  8. Pre-heat oven to 200°C. Take out the tray from the refrigerator and place or in the oven. Bake for 20 minutes.
  9. Remove them from the oven and transfer to a cooling rack and leave there until cool completely.
  10. Making of the sugar syrup :-In a pan, add everything mentioned for the sugar syrup, boil and stir until the sugar melts.
  11. Now cook the sugar syrup for 2-3 minutes more. You need to prepare the sugar syrup in such a way so that, it doesn't thicken too much, it should be in medium consistency.
  12. Now dip the cups in the sugar syrup one by one until the sugar syrup coat the cups from all the sides.
  13. Keep them aside.
  14. Making of the Filling :-In a non-stick pan add everything mentioned for filling.
  15. Start cooking over low heat until the mixture coming together.
  16. Remove from the heat.
  17. Then start to fill the cups with the mixture immediately.
  18. When done,garnish them with silverfoil, pistachios and saffron strands.
  19. Khoya Madhuri is ready to serve.
  20. Serve the sweets at room temperature.
