Make ready 2 Cups Refined flour
Prepare 1 cup Clarified butter
Prepare as needed Water

Take 1 cup Khoya
Prepare 1 cup Sugar
Get 1 tsp Green cardamom, powdered
Get for deep-frying Ghee
Prepare For the syrup
Prepare 1 cup Sugar
Take 1 Tbsp Almonds, finely chopped
Steps to make Khoya Gujia (Holi):
Saute the khoya till it's slightly brown in colour
Once it cools down add sugar, cardamom and almonds and mix well.
Give shapes to the filling and keep aside. - * Make balls of the dough and roll out into thick rounds.
Take a round, wet the edges and add the filling in the centre. - * Fold the other half over and press the edges together to seal.
You and either cut or seal the edges by twisting them in a shape of a rope. - * Make all the gujiyas in this way. Heat ghee in a kadahi. To check if the ghee is hot enough put a piece of dough in it. If it comes up at once, add the gujias and fry them till golden brown in colour.
Remove on a tissue paper. - * Make sugar syrup by cooking water and sugar together, till one thread consistency - * Dip the gujiyas in it, lift and let dry on a plate. - * Serve hot or on room temperature. Store them in an airtight container
Sprinkle some dry fruits on the gujia when removed from the sugar syrup so that they stick to them and look good.
