  1. Take 2 large carrots
  2. Prepare Pinch salt
  3. Make ready Pinch sugar

  1. Top, tail and peel carrots. I cut into battens.
  2. Bring to boil in cold water, uncovered. Boil for 5 mins, drain water and refill with cold water. Add salt, sugar& butter/olive.
  3. Bring to the boil again, uncovered. Boil until water almost gone. Keep a close eye on them. Give them a little swirl around the pan to coat them with remaining water. Do this a couple of times. Watch you do not want to burn them. Drain any remaining liquid. Serve. They should be glossy.
