The ingredients needed to make Mutton Biriyani:
  1. Prepare 1 kg biriyani rice
  2. Prepare 1 kg mutton
  3. Get 200 gm ghee
  4. Get 100 gm oil
  5. Prepare 250 gm small onion
  6. Prepare 10 gm cinnamon
  7. Take 5 gm cloves
  8. Take 3 tomatoes
  9. Prepare 10 gm cardamom
  10. Prepare 10 green chillies
  11. Prepare 1/2 nutmeg
  12. Prepare 25 gm ginger
  13. Prepare 1/2 cup yoghurt
  14. Get 1 tbsp chilli powder
  15. Prepare 2 handful coriander leaves
  16. Take 50 gm garlic
  17. Prepare 1 bunch curry leaves
  18. Make ready as needed Salt
  19. Prepare 2 handful mint
  20. Take Water required (2:1 water:rice)
Steps to make Mutton Biriyani:
  1. In a mixer jar add the cinnamon, cloves, cardamom and nutmeg and grind it to a fine powder.
  2. Next, grind the garlic and ginger to a smooth paste.
  3. Then grind the small onions separately.
  4. Soak the rice in water for 20 minutes. - Wash and Clean the mutton.
  5. Add half of the ghee and oil to the cooker, and then add the chilli, mint,  coriander leaves, curry leaves
  6. Then add the ginger garlic paste, onion paste, tomato.
  7. Now add the mutton, salt, chilli powder, biryani powder (cinnamon, cloves, cardamom, nutmeg), yoghurt and cook up to 10 whistles (reduce the whistle count based on the quality of the mutton.)
  8. In a heavy bottom vessal, add water and heat it until it comes to a boil.
  9. Then add the  mutton gravy and stir well. - After that add the soaked rice and salt as needed.
  10. Cook the rice until everything is well combined.
  11. Now keep the stove in medium flame and pour the remaining ghee to the rice and close the lid.
  12. When the biryani is ready, switch off the flame
  13. Serve the delicious mutton biryani with onion raita and gravy.
