  1. Take 3 large egg whites
  2. Get 1/2 tsp cream of tartar
  3. Get 2 tbsp granulated sugar
  4. Make ready 3/4 C golden corn syrup
  5. Take 2/3 C granulated sugar
  6. Get 1/2 tsp vanilla extract
Steps to make Marshmallow Fluff:
  1. Beat the egg whites and cream of tartar with a whisk attachment until foamy. Add 2 tbsp of sugar and beat till soft peaks form.
  2. In a saucepan, add 1/3 C water, the corn syrup, and 2/3 C sugar. Cook over medium heat while stirring for 15 minutes, or if you have a candy thermometer until it reaches 248 degrees.
  3. Add the corn syrup mixture to the beaten egg whites gradually while continuing to whisk. Once all the syrup is added, beat on high for 5 minutes. Add vanilla extract and beat on high for 1 minute. Store in an air right container.
