Nadru Yakhni is a famous kashmiri curry which finds its basis on yogurt along with lotus stems and some aromatic spices. people have different ways of making it using gram flour/besan, onion, green chillies, red chilli powder, turmeric etc. But that is not the traditional method.   1. Wash the lotus stem thoroughly and cut it into thin rounds
  2. Now boil them for about ten minutes in a pan or you can pressure cook them for 5 minutes on high flame then another 5 minutes on low flame or till 4 whistles. Check if they are done or not. If you can cut it easily with a spoon, that means they are done. Drain and keep aside. Don't throw the drained water we will be use it in the yakhni
  3. In a pan add some oil and heat it. Add the whole masalas.. big and small elachi, tej patta, cloves, dalchini.Stir it for a minute then to it add chopped onions (finely chopped lengthwise) cook the onions till golden brown.
  4. Now in a bowl add the curd. Beat it nicely add a little milk if required and a about 1 tsp of malai or besan (; it will prevent the curd from cuddling.)Add this to the fried onions and keep stirring continuously till one boil. keep the flame high. After this cover the curry with a lid and cook it for 5 minutes on low flame.
  5. Now add the boiled lotus stem / nadru to the curd gravy / yakhani and simmer for 1-2 mins. Garnish with coriander leaves and serve hot
