Then, add the tomato sauce to the pan and, optionally, some tomato paste. Add herbs and spices (I used salt, pepper, cayenne pepper, basil, chives and thyme). Optionally, add some lemon zest, to give the meal a more lively flavour. Simmer for 3-5 minutes and then add the grated smoked cheese. Simmer and keep stirring until the cheese melts.
